We are on the lookout for an individual with a passion for the catering industry to join our epic Food Team. With an enthusiasm to learn and cultivate new skills you will have great communication skills and the ability to work as part of a team and motivate others. As Apprentice Development Chef you will assist the Menu Development Manager and the wider team in all things pub food, including safety, coaching and training our pub teams in epic execution.
Supporting the Menu Development Manager on the development of new menus, to suit segmentation of pubs.
Support the menu development process, ensuring timelines are met whilst collaboratively working with the wider business stakeholders.
Drive awareness and understanding of how food sales and margin is created, developing the right menu with comprehensive use of costing systems to ensure every dish has correct margins.
Development of suitable off the shelf menus that will be available for our Publicans to use to realise the food opportunities within their businesses.
Research current and future trends within the food industry, as well as menu performance analysis, understanding how to incorporate into future menus.
Produce plate specification for each menu with high execution of food dishes through clear spec writing with food photography.

Level 2 Commis Chef aprenticeship standard
Level 1/2 Functional Skills in maths and English (if required)
This apprenticeship is delivered through a combination of Work Based Assessment and day/block release. The programme will culminate in an End Point Assessment, where all the skills and knowledge gained on the apprenticeship will be formally tested.
GCSE grades A – C/8-4 in maths and English is desirable.
