Food Business Manager

To support the delivery of a relevant and compliant food offer, across all of our concepts ranging from value, mainstream and upper mainstream that will play a significant role in delivering the vision for the pub. The Food Business Manager – can influence and demonstrate great business acumen that impacts positively on the overall business P&L. Through expertise and guidance on successful implementation of the Food & Back Of House launch plan for newly invested / conversion pub sites to ensure optimum food sales, delivering a consistently appropriate and safe food offer, as well as converting those sales into profit through coaching and setting up our Management Partners and their pub team to deliver excellent food controls and disciplines post launch.

We need someone who can:

• Supporting and developing MPs and their teams to execute food in a safe environment, ensuring maximum potential of each pub is realised

• Review all capex proposals to ensure that the tools and equipment are in place to execute food to a high standard

• Work with the relevant Ops teams to support site visits and agree the full food vision for each pub

• Advise OM’s on underperforming pubs vs budgeted figures for food sales

• Analytical in your approach to easily read and interpret food related reports to identify root causes of any issues, contributing solutions and ideas to create opportunities in both pub and food development

• Provide advice to the OM on how they can grow food sales, food gross profit, yield wastage speed and quality of service all underpinned with great food safety practices



Pubs, people, and possibilities are at the heart of everything we do, so the ideal candidate will:

• Approve food vision and budget as part of the capex process

• Work with regionally based kitchen suppliers to ensure they are provided with the right templates

• Ensure opening food orders and pre-set up tasks are completed ahead of launch week

• Consult with Oms to set up back of house, through spec book training and operational use for kitchen teams to positively impact on food safety , speed of service and food quality for customers who visit the pub

• Coach kitchen teams and Management Partners on the importance of accurately completing safety docs and logbooks

• Complete kitchen sign- off that is signed by the kitchen team using a templated form that provides a clear review and action plan for OM/Publican post launch



To be bold and proactive, we need a team member who can:

• Identify under performing food sites and provide centrally designed training to enhance the food offer and compliance to both spec and food safety

• Identify and deliver food and safety training to both OM’s and MP’s

• Support the Menu Development Manager on an allocated menu concept that includes scoping out and creating dishes that fit the concept and deliver against profit targets

• Generate pace and urgency on high risk food safety sites to support in minimising business risk



Accuracy is key to this role, so we need a team member who can:

• Putting publicans at the heart of what you do will mean you work closely with the Punch Progress team to provide training and upskilling solutions for publicans

• Working with the OM to educate them on how to achieve operational kitchen both back of house and front of house execution of food menus

• Provide guidance on requirements per menu and MP Concept for Publicans and support teams in attempt to help the OM understand the type of Publican to recruit

• Support in developing the OMs knowledge on food, through attending regular regional meetings and ensuring they receive regular updates as part of the menu process



As part of a team, you will be required to:

• Offer guidance to the OM on the skills needed to ensure that food has a sustainable success for the Pub going forward

• Support Concept and Menu Development in terms of operational requirements, kitchen capabilities and speed of service

Technical Competencies:
• Previous experience working within a food/catering environment, with strong catering kitchen experience

• Ideally management experience within a pub environment

• Group training technique (GTT) or craft training award (CTA) or relevant training qualifications

• Knowledge of the food service sector

• Passion for food

• Customer focused with a real passion for meeting the customers’ expectations

• Current driving licence

• Confidence in presenting information to large, varied audiences

• Competent in Microsoft Office packages, i.e. PowerPoint, Word, Excel

• Advanced food hygiene
