Food Operations Trainer (1x North East & 1x South East)

The Food Operations Trainer plays a key role in supporting, developing, and coaching our Management Partners (MP) and their teams to implement profitable food menus across each concept. Helping our MPs and their teams to be proud of the food offer, great food standards enabling them to master the end-to-end food service touch points from back of house setup, specs on point to epic front of house food service – you will get a thrill from coaching them on how it all comes together.

Using specialist knowledge ranging from kitchen skills training to a proven ability to upskill on areas of food safety within MP sites. Working together with the Food Business Manager to agree MP training and support resource to complete New MP food training and their teams in the overall investments process. Overall responsibility for delivering launch week food training and development for our Pub based operational teams, to include ongoing appraisal of teams’ service delivery through direct observation, coaching and in response to guest feedback – within the first 90 days of new pub sites opening.

We need someone who can:

• Supporting and developing MPs and their teams to execute food in a safe environment, ensuring maximum potential of each pub is realised

• Improve speed of service and review kitchen set up around peak sessions through regular pub visits whilst ensuring spec is adhered to

• Collate operational feedback to help improve menu development and implementation from hands on experiences in MP kitchens

• Working with wider Food Team to review and collaborate on evolving investment ways of working to make this process more efficient

• Ensure opening food orders and pre-set up tasks are completed ahead of launch week

• Work with MP’s and their teams to set up back of house, through spec book training and operational use for kitchen teams to positively impact on food safety , speed of service and food quality for customers who visit the pub

• Coach kitchen teams and Management Partners on the importance of accurately completing safety docs and logbooks

• Complete kitchen sign- off that is signed by the kitchen team using a templated form that provides a clear review and action plan for OM/Publican post launch

• Targeted training for underperforming food sites, enhance the food offer and compliance to both spec and food safety

• Support the Food Business Manger on acting with pace and urgency on high risk food sites to support in minimising business risk

Accuracy is key to this role, so we need a team member who can:

• Working with the MP and theirs teams to help educate them on how to achieve operational kitchen both back of house and front of house execution of food menus

• Support in developing the MP and their teams knowledge on food, through attending quarterly food meetings and to help keep up to date on changes and best practice to then cascade at Pub level

• Support Concept and Menu Development in terms of operational requirements, kitchen capabilities and speed of service

Technical Competencies:
• Previous experience working within a food/catering environment, with strong catering kitchen experience

• Ideally management experience within a pub environment

• Group training technique (GTT) or craft training award (CTA) or relevant training qualifications

• Knowledge of the food service sector

• Passion for food

• Customer focused with a real passion for meeting the customers’ expectations

• Current driving licence

• Confidence in presenting information to large, varied audiences

• Competent in Microsoft Office packages, i.e. PowerPoint, Word, Excel

• Advanced food hygiene
